CULTIVATION
Toni Gelabert has five hectares of cordon-trained vines,
cultivated using the cordon de royat pruning system, (leaving
eight spurs per vine).
He produces an average of two to three kilos of grapes per
year. The earth is fertilized with biological nutrients and,
in the cultivation, pruning, harvesting, transfer and
bottling processes, the age-old system of biodynamics is
used.
The winery has a capacity of 220 hectolitres. The juice of
the handpicked, hand-selected grapes is fermented at a
controlled temperature in stainless steel vats.
The red wines are left to mature from 12 to15 months in
French and American oak casks.The white Chardonnay and Torre
des Canonge wines are fermented and matured for three months
in new French oak casks.
Intuition, hard work and carefully nurtured fruit. Thanks to
these three things, Toni Gelabert has been awarded
distinctions both in and outside the Balearic Islands. His
merit resides in the efforts he has made to continue
improving his wines. |
